EASY LOW-CARB ZUCCHINI TOMATO BITES

Ingredients:

2 robust zucchinis
1 succulent ripe tomato, finely sliced
2 tbsp olive oil
Salt and pepper, adjusted to your palate
1 tsp garlic powder
1 tsp Italian herb blend
1 cup shredded mozzarella cheese (or cheese of your choice)

Fire up your oven to 400°F (200°C). Ready a baking tray with parchment paper or give it a slight greasing.
Carve the zucchinis into 1/4-inch thick disks. Lightly coat them with olive oil on both faces and arrange on the tray.
Season with salt, pepper, garlic essence, and the Italian herbs on each side.
Crown each zucchini disk with a slender tomato slice.
