Mom’s Famous Cream Puffs

This recipe makes about 12 cream puffs.

Ingredients:

For the Puffs:

1/2 cup (1 stick) of unsalted butter

1 cup of water

1 cup of all-purpose flour

4 large eggs

For the Cream Filling:

2 cups of heavy cream

1/4 cup of granulated sugar

1 teaspoon of vanilla extract

Instructions:

Start by preheating your oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a medium saucepan, bring the butter and water to a boil. Remove from heat.

Immediately add the flour and salt to the saucepan and stir vigorously until the mixture forms a ball.

Transfer the dough to a large mixing bowl. Add eggs, one at a time, beating well after each addition. This will result in a smooth, glossy dough.

Drop the dough by tablespoonfuls onto the prepared baking sheet, leaving about 2 inches of space between each puff.

Bake in the preheated oven for 20-25 minutes, or until golden brown. Allow to cool on the baking sheet.

While the puffs are cooling, prepare the cream filling:

In a large bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form.

Once the puffs have cooled, cut off the top of each puff and fill with the whipped cream.

Replace the tops and dust with powdered sugar, if desired.
