Peanut Butter Bits Cracker Candy

 

Cracker candy, a delightful treat, becomes even more irresistible with the addition of peanut butter bits. These salty, crunchy cracker sandwiches, combined with a hint of peanut butter, make for an addictive snack. Here’s a simple recipe to create this crowd-pleaser, perfect for gatherings or just a treat for yourself.

Ingredients:

2 boxes (8.8 oz each) Peanut Butter Ritz Bits

1 1/2 cups butter

1 1/2 cups brown sugar

3 1/2 cups semi-sweet chocolate chips

1 tbsp butter (for chocolate topping)

Optional: 1/4 cup roughly chopped peanuts

Preparation:

Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.

Arrange the cracker bits in an even layer on the baking sheet.

In a small saucepan, combine sugar and butter. Bring to a boil over medium heat and let it boil for 3-4 minutes. Then, pour this caramel over the crackers.

Bake for 6-8 minutes until the caramel bubbles.

Allow the sheet to cool slightly while melting the chocolate. In a microwave-safe bowl, heat chocolate chips and 1 tablespoon butter in 30-second increments until melted.

Pour and spread the melted chocolate over the crackers. Sprinkle with chopped peanuts if using.

Let the candy cool completely before breaking or cutting into pieces. To speed up cooling, place it in the fridge.
